Pigeon Pea can be simmered into soups, stews, and porridges. It is the star of Igbo Fio Fio porridge with yam or corn, and it also turns up in Caribbean rice and peas, Indian dal, and Tanzanian coconut mbaazi. A good source of plant protein and fibre.
