Tagiri is a small African gourd that ranges from jade green to creamy white and pale yellow. It has a crisp bite and a mild, faintly bitter flavour that mellows as it cooks. Enjoy it raw as a snack, or simmer it into stews and sauces. It also roasts and fries well.
